I don't think the video covered it but you should try Thai version of kway chap. It's mostly the same thing but instead of the wide and flat rice noodles we use, they use a rolled up version that's also more chewy and al dente. There's even a local chain selling this around Singapore. Can search for Yaowarat Thai Kway Chap. But those who are squeamish about fish getting killed and cut open should probably fast forward through the video...
