If you visit Vietnam, don't just eat pho. Try bun bo hue! A Vietnamese ex-colleague introduced it to me years ago and it's been my staple Vietnamese noodle dish since then.

Bun bo hue is really really good!  But the best places that sell it are usually open only in the morning so be prepared to wake up early if you want to try the real thing in Vietnam.
