I think the joke conversation Icicle wrote might be somewhat accurate. The restaurant wants to charge diners high high so they find some way to justify the price.

The way this salad was served reminds me of a news story I read a while ago.

There's a Russian holiday on which pancakes are usually served. So one of the Russian cities' local govt decided to celebrate the holiday by serving pancakes to a large crowd of people. And because it's a large crowd of people, they used a shovel to serve the food.

Unfortunately, a lot of Russians ended up being insulted by this and were complaining online about how the govt sees them as farm animals.

And now people are paying good money to be served salads on shovels. Hmm.
