Agreed. I still prefer mine with sambal. Big Smile

Yeah I guess it's much more feasible for local restaurants to use frozen meat and other ingredients instead. Nice video of the fermented skate by the way, always interesting to see the less popular traditional cuisine of other countries.

I thought this one Michelin Star restaurant has a super fun concept. Basically it's an all-you-can-eat fine dining experience where the staff even encourages you to join them in the kitchen to cook.

Mike Chen overdoes the yummy face sometimes but can tell he really enjoyed the scallops. I'd do the same also if it's free flow. Big Smile

It's very similar to how Iceland processes shark meat!

If I'm not wrong, the sting ray family is very close to sharks so it's fascinating to see two very different cultures preserve the meat more or less the same way. But looks like the taste is also something you have to grow up with to really enjoy. Smile

Wow love the vibe and concept of this restaurant. It's like fine dining style of food but in a more casual environment. One more for the bucket list. Like

That would not happen in the restaurant I used to part-time in. The chef would prob kill any customer who tried to enter the kitchen. Laugh Laugh

LOL! Such a weird feeling to see my reply in that video. I hope I didn't come across as overly negative because I'm still a fan of their channel. -_-

Don't worry la it's quite normal for any kind of content creator to overly focus on the non-positive comments they see on their work. My cousin is a photographer and even though his work is mostly well received, he can't help but fret about the very few negative comments.
