In my opinion duck is very difficult to cook well. If this stall can make tender duck with such a simple cooking method then it will be quite amazing.

Nice find. Stalls or restaurants specialising in duck can be quite hard to find. My fav is the restaurant in pasir panjang/south buona vista which has unfortunately closed because the owners retired. The one in dunman food centre is good too but very far away. -_-

Oh I didn't know the pasir panjang duck rice place closed. Went there a few times with my family 10-20 years ago.

For a restaurant to specialise in chicken soup, it must be really superb chicken soup. This is probably the most luxurious and thickest and milkiest chicken soup I've ever seen. Tempted to visit Taiwan just to try it out. Cheeky

Nice concept to have free refill of soup and they'll even add extra ingredients for you.

I have a feeling the trotter is the secret ingredient. Otherwise it seems very hard to make chicken soup so thick.

The long cooking time too, and don't forget the ham and scallops. The chef who created it really went all out on umami flavours.
